I have been working at Centro & Vivir (formally Popol Vuh) since they opened in 2018. My role was to build an agave program and train the staff. When COVID began shutting down things in March 2020, it shifted our entire business plan. Popol Vuh was shelved to reimagine the space for our new reality of COVID. Vivir was created and we began shifting our business models for both concepts to embrace more take away food and automation with the ordering process.  
I asked ownership if I could leverage the empty space in the back of Vivir. I had a closet full of mezcal that (in my opinion) needs to be consumed like a story. Each bottle has a story inside and on the label. This spirit should be consumed slowly to find the culture behind its production. My hope with this lounge it create a comfortable slow paced room that you can stop in for a mezcal and conversation.
In February of 2021, we opened with a reservation only model. This allowed groups to rent the space for themselves and enjoy an agave experience with their family and friends. Each reserve experience is about a 2 hour event that includes farm to glass information, agave spirits tastings and small bites. I'm overwhelmed with the response to this room. We book tastings Wednesday, Thursday and Friday evenings and currently are booking about 60 days out. 
In November of 2021 we began opening the lounge on Saturday nights from 6pm-11pm, no reservations needed. You can stop in and enjoy some mezcals without the reservation requirements.
Looking ahead to 2022, I am excited to see what this room can offer. I am working with brands and distributors to continually change and expand our collection. My goal is not to have the biggest selection of agave, but the most interesting and hard to find products.
